Ingredients

  • 4 Via Emilia’s Organic Zucchini Spirals Nests
  • 1 tbsp olive oil
  • 1 cup Pumpkin Puree
  • 1/2 cup broth vegetarian or chicken
  • 1/2 cup heavy cream
  • 1 tsp curry powder
  • 1/4 tsp nutmeg
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

 

Instructions

  • Add oil to a large skillet and bring to medium heat. Add Via Emilia’s Organic Zucchini Noodles and saute until just cooked. Drain out water and oil and set aside.
  • In a medium saucepan, add pumpkin puree, broth and heavy cream. Bring to a low boil and cook for 2-3 minutes until thickened and smooth. Stir in curry, nutmeg, and garlic powder. Add salt and pepper as needed.
  • Pour sauce into the skillet with the zucchini. Toss zucchini noodles in sauce and serve.

Ingredients

    • 4 cups of Via Emilia Organic Cauliflower Rice 
    • 1/2 cup Shredded Carrots
    • 1/8 cup Scallions
    • 1 tbsp Olive oil
    • 1 tbsp Species of your preference (Curry, Garlic and Herb, Pepper, etc)
    • tablespoon butter
    • 1 tablespoon olive oil
    •  1/2 teaspoon cumin
    • 1/4 teaspoon turmeric
    • 1/4 teaspoon ground ginger
    • 1/8 teaspoon cardamom
    • 1/8 teaspoon cinnamon
    • 1/8 teaspoon ground cloves
    • 1/2 teaspoon salt
    • Black pepper to taste
    • 3-4 tablespoons chopped cilantro, to garnish
 

Preparation

  1. In a large saucepan, heat 1 tablespoon of butter and 1 tablespoon of olive oil. When it is hot, add all the cauliflower, and stir occasionally for 5-8 minutes, or until tender.
  2. While it cooks, season with cumin, turmeric, ginger, cardamom, cinnamon, cloves, salt and pepper. None of these measurements or even the spices themselves are hard and fast–go with what sounds good to you.
  3. Remove from heat and add chopped cilantro to taste.
  4.  
    Serve with your favorite curry, grilled chicken, lamb, beef, pork, etc.

  • 2 cups of Via Emilia Organic Cauliflower Riceç
  • 1/2 cup Shredded Carrots
  • 1/8 cup Scallions
  • 1 tbsp Olive oil
  • 1 tbsp Species of your preference (Curry, Garlic and Herb, Pepper, etc)

Preparation

  1. Add olive Oil to a Medium/High Skillet and add Via Emilia Cauliflower Rice. Stir gently every few minutes for 6 minutes total. 
  2. Add the Species and mix. 
  3. Add the Shredded Carrots and the Scallions and. Let them sit for 3 minutes.
  4. ENJOY!

  2. Add Via Emilia Zucchini Spirals (2 Nests) and stir gently for 3 minutes.
  3. Add Wild Shrimps 2 min on each side adding the garlic powder
  4. Remove from heat and serve in a Bowl

  • 2 Nests (Servings) of Via Emilia Zucchini Spirals
  • 1 tbsp pasta sauce
  • Parmesan Cheese
  • Cherry Tomatoes

Preparation

  1. Just add the Zucchini Spirals to a skillet and sauté them up over medium heat. It only takes 2-3 minutes. 
  2. Take the skillet from the heat and add you favorite pesto sauce. Mix gently
  3.  Serve in a medium bowl. Add Parmesan Cheese and Cherry Tomato
